Petit Four in forme of caramel cake



Ingredients


Dough 
500 grams of flour 
50 g of butter 
1/4 cup of flower water 
1 pinch of salt 
little warm water



Stuffing :
500 gr of almond
Gum arabic
200 gr of powdered sugar
2 tablespoons of flower water 
50 gr of sesame
egg yolk


Instructions

  1. In a bowl put the peeled and blanched ground almonds, add the powdered sugar, the butter, Gum arabic and blossom water; mix well.
  2. Make little fingers out of the resulted mixture and put them aside. we move to the preparation of the dough. In a bowl put the flour, butter, salt, flower water, mix by adding a little warm water until a smooth paste, let it sit for 30 minutes, Roll out the dough then cut it with a glass, add the almond puddings, bend to wrap the dough together to give it the form of caramel, coat the heads in the egg yolk and sesame seeds, cook for about 15 minutes.
